GET YOKED WITH SUNSHINE EGGS
Egg whites are a staple in most fitness based nutrition plans, but they are so plain tasting. I mean, egg whites are great, but I LOVE me some egg yolk. Plus the yolk contains a long list of vitamins and nutrients as well as healthy fats and good cholesterol. Throughout my pregnancy and even into my contest prep I would eat 4 egg whites and one whole egg for breakfast. Like most other bodybuilders I scrambled them all together, totally losing the ooey goodness of that yolk. As a kid I loved sunny side up eggs with just enough drippy yolk to spread all over the cooked whites plus some for my toast too! After some experimentation I started making what I call “Sunshine Eggs” and enjoying every last bit of that yolk! Try some and I’m sure your day will be a little bit brighter!
Directions:

Spray Pan with Cooking Spray.

Add in 4 egg whites plus the white from the 5th egg, reserving the yolk in the shell (try not to break the yolk).

Cook on a medium-low setting with a lid (trust me, the lid is key).

Once they are cooked, remove the lid and gently add the yolk to the center of the eggs, letting it cook uncovered for about 30 seconds.

Flip the eggs quickly in the pan, then immediately flip back over onto a plate (Let them cook longer depending on how cooked you like your yolk).

Salt and Pepper to taste.
